Smoked Oyster
Texas Caviar, Avocado Mousse, Chorizo Crumble

Paired with Downtown Rodeo - Mezcal, Strawberry, Jalepeno Simple Syrup, Honey

Pork Chilorio and Elote Tamale
Poblano Crema, Pickled Slawn

Paired with Blood Orange Whiskey Soirée - Blood Orange Liqueur, Bulliet Bourbon, Simple Syrup, Orange Bitters

Fourth Course 

Texas Wagyu Short-Ribs
Macha Carrots, Blackberry BBQ Glaze, Cipolinni Onions

Paired with Orin Swift ‘Machette’ Red Blend

Fifth Course 

Apple-Almond Tart
Caramelized Apples, Pecan Streusel, Cinnamon Brittle Ice Cream
